The evolution of Collaborative Online International Learning (COIL) is reshaping global education. Integrating cutting-edge technologies like Generative AI promises to enhance collaborative learning across nations vastly. This abstract explores the COIL partnership between Universitat de Girona, Spain, and Tec de Monterrey, Mexico, highlighting the integration of generative AI, instructional design methodologies, and innovative pedagogies to develop crucial skills in students.
Project Overview:
Students from Universitat de Girona and Tec de Monterrey collaborated to explore traditional dishes from their cultures. They analyzed every aspect of the cooking process—production methods, ingredient sourcing, environmental impact, cost, safety, and health. This comprehensive study inspired future-oriented strategies like 'The Thing from the Future' game. Students used AI to envision scenarios and design solutions to enhance processes and mitigate risks. The AI was a powerful tool, enabling students to simulate various scenarios and predict potential outcomes, improving their problem-solving skills. The project culminated in a virtual reality gallery commemorating student achievements and offering insights into potential AI-influenced futures.

Educating students on AI's role in addressing climate change and preserving cultural heritage is essential for several reasons:
